Granola

INGREDIENTS

  • 8 cups oats
  • 1 cup blended nuts (I always make a mix, this version has cashews, hazelnuts, pumpkin seeds and walnuts)
  • 1/4 cup gojis (save till the end don’t bake)
  • 1 cup agave syrup (maple is even better)
  • 1 cup coconut oil

METHOD

Preheat the oven. Mix the oats and the nuts and then add the agave and coconut oil, mix well. So you want a “wet” mixture, not dry. If you feel you need to add some more agave or coconut oil go for your life, if you like to make even bigger chunks you should add more agave. Mix everything really well, making sure the granola is fully massaged and covered with agave and coconut oil.

Next step. Prepare a baking tin, line it with baking paper and place the granola in. Spread well and bake for 20 minutes. Then after 10 minutes mix the granola again so it’s baked all through not just on one side. Bake for 15 more minutes. On 180.

Last step. Take the granola out of the oven, let it cool down, add the goji berries and mix well. I sometimes also add chia seeds and coconut through the mix for the look and the taste…..
